Chopped Greek Salad

  • 1/4 cup red-wine vinegar
  • 1/4 cup lemon juice
  • 1/3 cup extra-virgin olive oil
  • 1 tablespoon chopped fresh oregano (or 1 teaspoon dried)
  • 1 tablespoon chopped fresh mint
  • 3 cloves of minced garlic or 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 6 cups chopped romaine lettuce
  • 1 can of garbanzo beans
  • 1 pint cherry or grape tomatoes, halved
  • 1 English cucumber, split into quarters lengthwise and cut into 3/4-inch
  • 1/2 cup finely chopped red onion
  • 1/2 cup pitted kalamata olives (halved)
  • 1/2 cup crumbled feta cheese

PREPARATION

Whisk vinegar, oil, and oregano, garlic or garlic powder, salt and pepper in a large bowl. Add lettuce, beans, tomatoes, cucumber, onion, olives and feta; toss to coat.
